Some designs use flat bottoms and planes at the bow and stern; some (like Theil's) use curved bottoms.

What are the likely effects of the two design choices?

I've read references to a slapping effect when the face of a wave matches the slope of the bow - would a curved bottom minimize this?

Any other differences (aside from ease of fabrication?)

Not much difference with either.
Any flat plane presented to ripples or waves will slap somewhat.
Comes back to the same caveat :
These are essentially sheltered (that word again lol) ,flat water boats.
A thick , heavy built bottom would improve the drumming , and noise somewhat.

If you look at your two images , the Thiel boat has the shallower angle at the water line , suggesting it could be even noisier at anchor than the top (Atkin) boat.

I truely believe that there would be little difference between the two hulls.

The best of the scows have v bottoms :

But up goes the build cost , time frame , complexity etc.etc.
